I am so proud to introduce this project
I have been working on for months now.
In fact, you might say I have been working
on it for about thirty four years! When I
 was in high school in Oro Valley, I worked
at the Tucson Boys and Girls Club and part
of my job there was teaching the kids
to cook. Since that time, I have been
accumulating knowledge of food and cooking.
My cookbook collection numbers around 1000.
I have read them all. Nearly all of our family
events focus on food and we have hosted
Thanksgiving for ten years. (we feed around fifty)
My pursuits have taken me to commercial
kitchens and we cater events for hundreds!
The point is, I have always wanted
an opportunity to share this knowledge
and my love of cooking. Our regular cooking
classes usually involve cooking a meal of related
dishes. We love these, but now I wanted
to offer a complete cooking course of
the Basics of Cooking.

My own sort of Cuisine Classique!
If you ever wanted to just learn all the
fundamentals of preparing different kinds
of ingredients and what tools you need to
do that, and how to use them............
The fun part, not just the dull stuff.
This is the course for you!
I have planned nine weeks
of teaching you everything from
Good Knife Skills

(the first, most important thing you should learn)
to
Stocks, and Sauces
 Chicken and Poultry
 Fish and Shellfish
Meat
Starches, Grains, and Vegetables
Egg Cookery

Desserts
Hors D’ Oeuvres
with guest
Chef Denis Soderman
Five Course Meal
(you are encouraged to invite a guest
to enjoy the dinner we have cooked
in this class)

 I like to make my classes informal and fun
for you, whether you know nothing or "everything"
This course will include lectures,
demonstrations and hands on learning.
We will have something to eat at each class.
