After
you have decorated your hard cooked
eggs, you should refrigerate them
immediately. They are more susceptible
to bacteria after hard cooking them,
than they
are when they’re raw.
To prevent bacteria from forming, it is best
to use plastic eggs for hiding etc,
and keep
the real ones refrigerated.
It is hard to say how long they can be
un-refrigerated because of varying
indoor and
outdoor temperatures. Play it safe
and keep them refrigerated until
just before eating!

PERFECTION!
To make a perfect hard cooked egg;
place cold eggs in a saucepan in a
single layer.
Cover with cold water, just over the
tops.
Add 1 tablespoon white vinegar; this
helps
to center the yolk in the shell. Bring
to a boil.
As soon as the water starts to boil,
cover the saucepan, turn off the heat,
and set the timer
for 13 minutes.
Meanwhile, prepare an ice water bath
for the eggs in a bowl; use about 12
ice cubes
and cover them with water in a
medium-size bowl.
As soon as the eggs are done, take
them out of the hot water and place
them in the ice water bath. I use a
cupped pasta fork to lift each egg out
of the water and gently place them in
the ice-water bath. |
