Mardi designed this class for those who celebrate
Thanksgiving in a small but elegant way. We will make Roast Turkey Breast
with Italian Sausage Stuffing, and Port Sauce, Roasted Root Vegetables,
Pear and Arugula Salad with Balsamic Vinaigrette, and Rustic Apple Tart
for dessert. These recipes can be easily multiplied.

Bouillabaisse, the classic
French fish soup/stew. We will learn to prepare Fish Stock, Rouille, and
Fresh Mussels and Clams. Then bring them all together to make delicious
Bouillabaisse. Served with a Mixed Green Salad, and Garlic Toast, with
Double Chocolate Soufflés for dessert, we will create a very memorable
meal that you will be able to make again and again

This is a class for teens, ages 13-18. We will make
our own Pasta and enjoy it with Sauce and Meatballs, Green salad with

Six: Sausage Making

We expand our culinary knowledge with the addition of sausage making!
We will make Italian Sausage, Bratwurst, Country Breakfast Sausage and
Cajun Andouille Sausage, and Mexican Chorizo. There are many different
ways to prepare each type of sausage and Mardi and Bob will share their
favorite recipes for each type. You do not need special equipment to make
sausage, it can be done by hand. We will use our stand mixer (with
attachments) and our hands to make our sausages and enjoy them
with a Mixed Green Salad with Lemon Vinaigrette, Rosemary Bread,
and Chocolate Pannini for dessert!

Cuisine Classique classes include a full meal, recipes and
a selection of wine(s) chosen to complement the food.
Most classes last about three hours.
