Paella

Location: Burden home near La Canada and Magee Roads

Come learn to make the national dish of Spain. Paella is a delicious melange of rice, vegetables, sausage, chicken, seafood, and saffron.
It can be made many different ways and inspires much debate about the chosen ingredients among aficionados! We will each make our own
paellas and enjoy them with salad and dessert!

Market Road Trip               

Participation                 $85.00

Location: Meet at Cuisine Classique  (1060 W. Magee Rd.) at 10:00am, return at about 4:00pm.

We will journey via van to the 17th Street Farmers Market to shop one of Tucson’s best food markets. We can buy fresh fish, organic vegetables,
and many European and Asian specialty foods. We will then venture to Roma Imports, for some delicious Italian specialties, and then on to Local Harvest, for all local foods grown within 250 mile of Tucson.
By now Mardi is starving so we go to Vivace for a delicious lunch from Mardi’s classmate Daniel Scordato. Then on to Jasmine market for Persian foods, and India Dukaan for Indian foods. We will provide ice chests to carry all our food purchases safely on our journey and of course, lots of bottled waters. Coffee and continental breakfast included. Space is limited so reserve early!

Basics of Cooking Series:
Session Four: Meat

Participation                  $59.
Mardi Burden               6:30 pm - 9:30 pm
Location: Burden home near La Canada and Magee Roads

In week four we will learn how to sauté, braise, roast, and grill; beef,
lamb and pork. We will learn to identify and prepare the different cuts,
and all about the different grades of meats. We will also enjoy a meal including mixed green salad with Mustard-Thyme Vinaigrette, Steamed Broccoli, and Fresh Fruit for dessert.

Intermediated Basics of Cooking Series:
Session Four: Culinary Equipment

Participation                 $59.

Location: Burden home near La Canada and Magee Roads

Session Four finds us learning about culinary equipment, utensils, and
food staples. And what items are needed for a completely stocked, cook ready kitchen, and even Mardi’s recommendations for a portable kitchen
for camping, cabins, or cabanas! Our menu includes a complete meal from the pantry; Spaghetti with Clam Sauce, Pantry Marinara Sauce, Vegetables a la Grecque, served with a Mixed Green Salad with Italian Herbs Vinaigrette, and Chocolate Puffs for dessert.

Roast Chicken with Forty Cloves of Garlic

Every good cook has some great easy to prepare menus, and this is
one of them. Come learn to prepare this classic and piquant roast chicken. We will also prepare Herbed Mashed Potatoes, Mixed Green Salad with Caper Vinaigrette, and Espresso Mousse for dessert.

Session One: Sauteed Chicken Breasts

Boneless chicken breasts are very easy to prepare and can be really delicious too! We will learn proper sautéing techniques and enjoy Chicken Breasts with Garlic and Herbs, Cauliflower with Parmigiano-Reggiano cheese,  a Mixed Green Salad with Simple Vinaigrette, and Gooey Baked Apples for dessert.

Mardi has developed this series of classes for those who want great, nutritious,  food fast! We will cover what to stock in your pantry; how to stretch your food budget, and how to prepare a delicious meal in an hour
or less! We will also cover many different cooking techniques and where
to purchase all the foods we use, and how to shop efficiently!
This class is appropriate for beginner cooks, and those
 who want to learn new ways to prepare some classics!

 

 
 

Cuisine Classique classes include a full meal, recipes and
a selection of wine(s) chosen to complement the food.
Most classes last about three hours.
