In session
six of the Intermediate Cooking Series we will discover the joys
of bread baking, including classic French Baguettes, Rustic Pain
au Romarin, Pita Bread, Pretzels, and Focaccia and Flatbreads.
We will
make a meal of our fresh breads, a Mixed Green Salad
with Lemon Sorbet for Dessert.

Session Two: Poultry

second week we are going to explore Poultry. We will brine,
sauté, grill & roast our chicken, Cornish hens, and turkey. We
will also create a simple salad, fresh vegetables, and enjoy
fresh fruit and cheese for dessert.

Cookery we will learn to poach, soft boil, hard boil, beat, whip and bake,
and souffle our eggs. We will serve them with a

will learn how to prepare healthy vegetarian meals; including some classic
French potato recipes including Pommes Anna,
and Potato & Turnip Purees, Zucchini Spaghetti, Stir Frying vegetables.
We will enjoy our vegetables with steamed white rice and Watermelon
Sorbet.

In week three we will
be working with fish and seafood. The lesson plan
will cover, purchasing, handling, and preparing different types of fish and
shellfish.
We will prepare fish stock, and poach, sauté and grill our shellfish.
We will complete our meal with a Mixed Green Salad with Lemon-
Thyme Vinaigrette, and Fresh Fruit for dessert.

Summer is the
perfect time to add more fresh vegetables to our diets.
There is an abundance of vegetables in our gardens and in the
markets.
Our lo-fat menu includes grilled tomato appetizer, Grilled Chicken
with Mint/Caper Sauce, Herbed Green Beans, Zucchini “Spaghetti”
(made with
a Japanese vegetable slicer), Tomato, Onion, and Avocado Salad with
Basil Vinaigrette, and Lemon-Thyme Sorbet for dessert.

Basics of Cooking: Session Seven: Desserts

WE will
explore the wide world of sweets this week and learn to prepare some
basic dessert favorites including cheese cake, genoise with
chocolate ganache frosting, choux pastry, and chocolate soufflés.
This session we will also enjoy grilled chicken, with a Mixed Green
Salad with Sherry Vinaigrette.
Cuisine Classique classes include a full meal, recipes and
a selection of wine(s) chosen to complement the food.
Most classes last about three hours.
