Basics of Cooking Series: Intermediate Level Session One: Intermediate Knife Skills

In our first session of the Basics of Cooking; Intermediate Level we will enhance our basic knife skills with vegetable garnishing, using mandolins and Japanese vegetable slicers, and deconstructing poultry. We will grill our “deconstructed poultry” and enjoy it with a “composed” salad featuring our vegetable garnishes, with a delicious vinaigrette, and of course some excellent baked bread and dessert!

Our new Thrill of the Grill Series is every Wednesday night in July!
Each week we will explore a different aspect of the fine art of grilling!
      In session one of the thrill of the grill series we will grill Portobello mushrooms, Hamburgers with Herb Butters and Cheeses, and Mardi’s Favorite Persian Burgers. We will also grill corn, tomatoes, and Cajun
Shrimp Appetizers and Mardi’s version of S’mores will be for dessert!

Session One: Knife Skills and Stocks

In our first week of the Basics of Cooking Series we will learn knife skills, safe cooking practices, basic utensil identification, and make two basic stocks: chicken and veal. We will make a refreshing gazpacho and enjoy it with a salad dressed with a simple French Vinaigrette, and fresh fruit and cheese for dessert.

In Session two of our grilling series we will learn to grill juicy, moist chicken! Our recipes include; Brined Chicken Thighs and Legs with Citrus Marinade, Stuffed Grilled Chicken Breasts, Grilled Vegetables with Balsamic Vinaigrette, and a Grilled Baba Ganoush Appetizer. To complete our grilled feast: Green salad with vinaigrette and grilled fruit

We will brine, sauté, grill, and roast chicken, turkey and Cornish hens.

Basics of Cooking Series: Intermediate Level Session Three: Proteins and Menus

Location: Burden home near La Canada and Magee Road

In Session Three we will conduct an in depth study of beef, poultry,
fish, lamb, and pork. We will learn to identify the different American
butcher cuts, and how to select each type, and what the different
grades of proteins mean. The second part of class we will learn about
Menu Building. We will prepare the grilled protein of our choice, and
serve it with an vegetable, starch, salad, and dessert!
